Recipe Review: Potato Soup No matter how hard I try to deny it, fall is officially here.
I’m not a big fan of Halloween, I don’t really ‘get’ the October obsession, and I HATE pumpkin spice (yep, I said it).
I do love hoodies though… and FOOD! – and we all know that fall equals comfort food.
My favorite fall comfort food? – Soups! - Especially the creamy ones.

I must not be the only one around here that digs soups because I didn’t find this particular recipe, my step-daughter did. And the minute she tagged me in Gimme Some Oven’s video Facebook post, this soup immediately snagged a spot in our meal plan – and we are so glad that it did!!

The consistency was perfect, the ingredients’ flavors melted together deliciously, and it was easy!

I prepped the potatoes, bacon(don’t forget to save the bacon grease!), and onion the night before so the only thing I had to do the morning of was throw it all in, pour chicken stock over the top, and turn the crockpot on low.

Eight-ish hours later, when I returned from work, I cooked up the roux, smashed it in (using a potato masher) and added the cheese, sour cream, and seasoning. – Here is the one and only ‘modification’ I would (and did, after the first few bites) make to this recipe: replace the salt with garlic salt and add twice the amount called for.

I then let it all sit in the crock-pot on high for another half hour as I ran to pick my football player up from practice. By the time we got home, it was perfectly blended and ready for serving.

I would love to be able to report back with a picture of a perfectly garnished bowl as pretty as the one in the post where the recipe originated -- but quite frankly, there was no time for that. Food disappears fast around here, and this soup was vanishing at an alarming rate. So, please forgive me for my lack of ‘pretty’ and just trust me when I say you HAVE to try this soup!!
